- 20 g — Dried red chilies, soaked (4)
- 200 g — Roasted red peppers (2)
- 10 g — Garlic (2 cloves)
- 16 g — Tomato paste (1 Tbsp)
- 15 ml — Olive oil (1 Tbsp)
- 2 g — Cumin (1 tsp)
- 2 g — Ground coriander (1 tsp)
- 3 g — Salt (½ tsp)
Step-by-Step Method
- Soak the chilies. Soak dried red chilies in hot water for 30 minutes, then drain.
- Blend thick. Blend everything to a thick, deep-red paste.
- Rest & store. Rest 1 hour so the spices marry. Perfect for meat, rice, grilled food and marinades. Keeps 2 weeks refrigerated with a thin layer of oil on top.
Chef AK's Tip: Keep the chili soaking water — a spoon loosens the paste and adds clean heat.
