Ingredients

Step-by-Step Method

  1. Make the dough. Let the yeast bloom in warm milk with sugar for 10 minutes. Knead a soft dough with flour and yogurt, cover and rest 1 hour.
  2. Roll it out. Take a large grape-sized ball of dough and roll it into an oval. Press the garlic and cilantro on top and roll lightly once more.
  3. The griddle trick. Brush water on the underside and stick that side to a hot griddle. When bubbles appear on top, invert the griddle over the flame to char the top.
  4. Brush with butter. Brush with melted butter the moment it comes off the heat. Serve piping hot with gravy — never serve naan cold.
Chef AK's Tip: Chef Tip: Wrap cooked naan in a cloth as it comes off the griddle — the trapped steam keeps it soft.
