- 60 g — Tahini (¼ cup)
- 30 ml — Lemon juice (2 Tbsp)
- 30 ml — Water (2 Tbsp, adjust thickness)
- 5 g — Garlic (1 clove)
- 3 g — Salt (½ tsp)
- 1 g — Cumin (¼ tsp, optional)
Step-by-Step Method
- Whisk the base. Whisk tahini, lemon juice and salt. It will seize and thicken — keep whisking.
- Loosen it. Add water a spoon at a time, whisking, until it turns pale and pourable.
- Finish & store. Stir in crushed garlic and cumin. Great for falafel, bowls and roasted veggies. Keeps 1 week refrigerated.
Chef AK's Tip: Ice-cold water makes tahini sauce extra pale and fluffy.
