- 48 g — Fresh basil leaves (2 cups)
- 35 g — Pine nuts or cashews (¼ cup)
- 10 g — Garlic (2 cloves)
- 25 g — Parmesan, grated (¼ cup)
- 60 ml — Olive oil (¼ cup)
- 15 ml — Lemon juice (1 Tbsp)
- 3 g — Salt (½ tsp)
- 1 g — Black pepper (¼ tsp)
Step-by-Step Method
- Blitz the base. Blend the nuts and garlic first to a coarse crumb.
- Add the basil. Add basil, parmesan, lemon juice, salt and pepper; pulse a few times.
- Stream the oil. With the motor running, pour in the olive oil to a coarse, bright-green paste.
- Serve & store. Toss through pasta, pizza or sandwiches. Keeps 1 week refrigerated with a thin layer of oil on top.
Chef AK's Tip: Never cook pesto — toss it through hot pasta off the heat with a splash of pasta water.
