Seafood paella in a wide pan with shrimp, mussels and lemon wedges

Valencia's saffron rice, cooked in a wide pan and never stirred after the stock goes in — that stillness is what builds the prized crispy bottom crust, the socarrat.

Ingredients

Step-by-Step Method

  1. Bloom the saffron, build the sofrito. Steep saffron in the hot stock. In the paella pan, soften pepper in olive oil, then garlic and grated tomato; cook down 8 minutes to a dark, sweet sofrito — the flavor base of the whole dish.
  2. Toast the rice. Rice into the sofrito with paprika, stirring 2 minutes to coat every grain. Spread it in one even layer across the pan.
  3. Stock in — hands off. Pour in the saffron stock, season, and from this moment DO NOT STIR. Simmer 18 minutes, rotating the pan for even cooking. Nestle the shrimp and mussels (hinge down) into the rice for the last 6–7 minutes.
  4. The socarrat & the rest. When the liquid is absorbed, raise the heat 60–90 seconds until the bottom crackles faintly — that toasted crust is the socarrat. Rest covered with foil 5 minutes. Serve in the pan with lemon.
Chef AK's Tip: Chef Tip: Listen for the socarrat: the pan goes quiet, then starts to crackle softly. Smell for toast, not smoke — 30 seconds too long burns it.
