- 245 g — Plain yogurt (1 cup)
- 8 g — Fresh mint leaves (¼ cup)
- 3 g — Fresh coriander (2 Tbsp)
- 5 g — Garlic (1 clove)
- 15 ml — Lemon juice (1 Tbsp)
- 15 ml — Olive oil (1 Tbsp)
- 3 g — Salt (½ tsp)
- 1 g — Black pepper (¼ tsp)
Step-by-Step Method
- Blend it smooth. Add everything to a blender and blitz until pale green and smooth.
- Chill. Rest 30 minutes in the fridge so the herbs bloom.
- Serve & store. Best with salads, grilled chicken and wraps. Keeps 3–4 days refrigerated.
Chef AK's Tip: Use thick or hung yogurt — thin yogurt makes a runny sauce.
