Mixed Rice • Vegetables • Fried Egg — Korea

Bibimbap bowl with seasoned vegetables, kimchi and a fried egg over rice

Korea's mixed-rice masterpiece: warm rice under neat piles of sesame-seasoned vegetables, kimchi and a fried egg, all torn together at the table with fiery-sweet gochujang sauce. Bibim means mixing — that is the ritual.

Ingredients

Step-by-Step Method

  1. Season each vegetable separately. This is the bibimbap discipline: carrots, zucchini, sprouts and spinach each cooked briefly on their own and seasoned with sesame oil, garlic and a pinch of salt or soy. Mixed cooking makes mixed flavors — separate keeps each one bright.
  2. Mix the bibim sauce. Gochujang, 1 Tbsp sesame oil, soy, sugar and a splash of warm water whisked smooth. It should pour like ketchup.
  3. Fry the eggs. Sunny-side up with lacy edges, yolks still runny — the yolk is part of the sauce when you mix.
  4. Assemble, then mix hard. Rice in warm bowls, vegetables in neat sections, kimchi alongside, egg in the center, sesame over all. At the table: sauce on, and mix vigorously until every grain is stained red. Bibimbap is eaten mixed, never in sections.
Chef AK's Tip: Chef Tip: For the restaurant version (dolsot), heat a stone or cast-iron bowl until very hot, oil it, add the rice first and let it sit 3 minutes — you get a crispy rice crust at the bottom.
